Ingredients

vegetable oil

ground cinnamon
cinnamon sugar
just some extra for sprinkling
Instructions
Preheat oven to 375 degrees
Spray a 12 cup muffin tin with cooking spray (or use muffin cup liners)
Mash about 2 ripe bananas in a large mixing bowl
Add in sugar, eggs, oil and vanilla.
Mix those ingredients with a hand mixer or stand mixer until blended.
Add in flour, baking soda, cinnamon and salt. Mix in until blended.
Fill muffin cups with batter about 3/4 full ( I use an ice cream scoop to do this)
Sprinkle cinnamon sugar over the batter once it is poured into the tins.
Bake at 375 for about 18 minutes or until a toothpick in the center comes out clean.
Immediately ( or as soon as you can handle) remove muffins from the tin and allow to cool.
Store in an airtight container.
