Ingredients
Instructions
  1. Preheat oven to 375 degrees
  2. Spray a 12 cup muffin tin with cooking spray (or use muffin cup liners)
  3. Mash about 2 ripe bananas in a large mixing bowl
  4. Add in sugar, eggs, oil and vanilla.
  5. Mix those ingredients with a hand mixer or stand mixer until blended.
  6. Add in flour, baking soda, cinnamon and salt. Mix in until blended.
  7. Fill muffin cups with batter about 3/4 full ( I use an ice cream scoop to do this)
  8. Sprinkle cinnamon sugar over the batter once it is poured into the tins.
  9. Bake at 375 for about 18 minutes or until a toothpick in the center comes out clean.
  10. Immediately ( or as soon as you can handle) remove muffins from the tin and allow to cool.
  11. Store in an airtight container.
